Fruit Salad with Orange Juice

This refreshing fruit salad with orange juice is a delightful mix of fresh fruits and a sweet, tangy dressing. Perfect for any time of day, this salad is both healthy and delicious.

Ingredients:

  • 3 cups orange juice
  • 1 teaspoon roasted orange peel
  • 3 tablespoons honey or maple syrup
  • ½ lb strawberries
  • 1 cup diced melon
  • 1 cup grapes
  • 1 cup pineapple
  • 1 apple
  • 2 kiwis
  • ¼ cup pomegranate seeds
  • 1 mango
  • 1 banana
  • Fresh mint leaves for garnish

Instructions:

  1. Prepare the Fruits:
    • Wash all the fruits thoroughly and let them air dry or pat them dry with a paper towel.
    • Peel the fruits as needed and cut them into bite-sized pieces, ensuring they are roughly the same size.
    • Halve large grapes. If using canned pineapple, drain the juice before using.
    • Cut the bananas and apples last to prevent browning before adding them to the salad.
  2. Make the Dressing:
    • In a large mixing bowl, combine the orange juice, roasted orange peel, and honey or maple syrup. Mix well.
  3. Combine the Fruits:
    • Add the strawberries, melon, grapes, pineapple, kiwi, apple, and mango to the bowl with the dressing. Mix gently to combine.
    • Add the banana and pomegranate seeds, mixing gently to incorporate them.
  4. Chill the Salad:
    • Cover the salad and refrigerate for 2 to 3 hours to allow the flavors to meld. If letting it rest, add the bananas and pomegranate seeds 1-2 hours before serving to keep them fresh.
  5. Serve:
    • Garnish with fresh mint leaves before serving for an extra burst of flavor and color.
