- 2 tablespoons (25g) Tomato Sauce
- 1 teaspoon (20g) Tomato Paste
- Paprika, black pepper, cumin (to taste)
- Chopped Parsley (optional, for garnish)
INSTRUCTIONS:
1️⃣. Preheat and Prepare Potatoes:
- Preheat your oven to 200°C (392°F).
- Peel and slice the potatoes into thin rounds.
- Toss them in a bowl with 2 tablespoons of vegetable oil and 4g of salt, ensuring they are evenly coated.
2️⃣. Layer and Bake:
- Arrange the potato slices in a single layer on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 30 minutes or until they are tender and slightly golden.
3️⃣. Prepare the Beef Filling:
- While the potatoes are baking, heat 2 tablespoons of vegetable oil in a skillet over medium heat.
- Add the chopped onion, green and red peppers, and minced garlic. Sauté until soft.
4️⃣. Brown the Beef:
- Increase the heat to medium-high and add the ground beef to the skillet. Cook until the beef is browned, breaking it apart with a spoon.
5️⃣. Simmer the Filling:
- Stir in the tomato sauce, tomato paste, paprika, black pepper, cumin, and salt. Cook for an additional 5 minutes, allowing the flavors to meld.
- Remove from heat and stir in the chopped parsley (if using).
6️⃣. Assemble the Potato Roll:
- Once the potatoes are done, let them cool slightly.
- On a clean surface, lay out the potato slices overlapping each other.
7️⃣. Add the Cheese:
- Sprinkle the grated cheddar cheese evenly over the overlapping potato slices.
8️⃣. Add the Beef Filling:
- Spoon the beef filling over the cheese-covered potato layer, spreading it out evenly.
9️⃣. Roll the Potato Layer:
- Starting from one end, carefully roll the potato and beef layers into a log shape. Use the parchment paper to help lift and roll if needed.
🔟. Bake the Roll:
- Transfer the roll to a baking sheet lined with fresh parchment paper.
- Bake in the preheated oven at 200°C (392°F) for an additional 10-15 minutes, or until the cheese is melted and the roll is heated through.
Serve warm slices garnished with extra chopped parsley if desired. Enjoy your Ultimate Potato Roll!
