Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- Salt and pepper to taste
- Olive oil for cooking
Instructions:
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, mozzarella cheese, Parmesan cheese, minced garlic, dried basil, dried oregano, salt, and pepper. Mix everything together to create the stuffing.
- Carefully slice a pocket into each chicken breast. Be sure not to cut all the way through. Season the chicken breasts with a bit of salt and pepper.
- Stuff each chicken breast with the spinach and cheese mixture, dividing it evenly among them.
- Heat a skillet over medium-high heat with a bit of olive oil. Once hot, add the stuffed chicken breasts and cook for about 2-3 minutes on each side until they are nicely browned.
- Transfer the browned chicken breasts to a baking dish and place them in the preheated oven. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Once done, remove the chicken from the oven and let it rest for a few minutes before serving.
- Optionally, garnish with extra grated Parmesan and fresh basil before serving.
