Frozen Fruit Salad

This vintage recipe, straight from my great-grandma’s recipe box, is a delightful twist on marshmallow fruit salad, with an added fun factor because it’s frozen! Perfect for holidays or as a refreshing summer side dish, this frozen fruit salad could also serve as a light dessert. It remains a staple at my family gatherings, often prepared by my Aunt Jenny for Easter, Thanksgiving, and Christmas.

Ingredients:

  • 8 ounces cream cheese, softened
  • 2 cups whipped topping, plus more for serving
  • 1 pint strawberries, diced
  • 2 large bananas, chopped and diced
  • 20 ounces crushed pineapple, drained

Instructions:

  1. Prepare the Mixture:
    • In a mixing bowl, combine the softened cream cheese and diced strawberries.
    • Fold in the crushed pineapple, chopped bananas, and whipped topping into the cream cheese mixture until well combined.
  2. Assemble the Salad:
    • Spread the mixture evenly in a 9×13-inch baking pan.
  3. Freeze the Salad:
    • Place the baking pan in the freezer and let the dessert harden completely.
  4. Serve:
    • When ready to serve, allow the frozen salad to sit on the counter for about 10 minutes to soften slightly.
    • Dip a knife into hot water and slice the frozen dessert into squares.
