Delicious Flourless Pancakes


A cup of yogurt and a whole mountain of delicious food is ready in just 10 minutes! These flourless pancakes are perfect if you’re craving flavor but are short on flour. Made with simple ingredients, they are delicious and gluten-free.


  • 2 eggs
  • 2 tablespoons sugar
  • A pinch of salt
  • 250 ml kefir (or plain yogurt)
  • 250 g semolina
  • 1 tablespoon baking soda
  • Apple (or other fruit) filling
  • Frying oil


1. Prepare the Dough:

  • In a bowl, beat the eggs, sugar, and salt together.
  • Add kefir and mix well.
  • Add baking soda and mix again.

2. Add Semolina and Cheese:

  • Gradually add the semolina to the dough.
  • Knead in the cheese until the dough becomes soft.

3. Prepare the Filling:

  • Slice apples (or your chosen fruit).
  • Melt butter in a pan, add the apples and sugar, and cook for 3-4 minutes until soft and golden brown.

4. Making Pancakes:

  • Spread the dough into a piping bag or a plastic bag with a corner cut off.
  • Heat a pan over medium heat and lightly oil it.
  • Pipe small portions of the dough onto the pan.
  • Place a small amount of the fruit filling on each portion.
  • Cover the filling with another layer of dough.

5. Fry Until Golden Brown:

  • Fry the pancakes until golden brown on both sides.
  • Carefully flip to cook evenly.


  • Add a teaspoon of cinnamon to the dough for extra flavor.
  • Don’t overmix the dough; a little less mixing will result in fluffier pancakes.
  • Use a spoon to measure the size of the portions for consistent pancakes.
  • Adjust the cooking time based on the size of your pan.
